Pizza Bites

IMG_0681I like to experiment, and sometimes it takes a couple of tries before it tastes right. This is my first attempt to make an alternative to frozen pizza snacks. The outcome was good. The bites pulled apart from the pan, the cheese was melted and delicious. It wasn’t perfect though. My boyfriend and I agree it needs more tomato sauce, more garlic, and probably butter. My own fault,  I attempted to be healthier with avocado oil instead of butter. Next time, I think pepperoni would be a good addition.

RECIPE: Pizza Bites 
Makes Finger Food for Many

SUPPLIES NEEDED:IMG_0670
Cast iron pan
Kitchen Aid Mixer
Rolling Pin
Knife
Cutting Board
Little Bowl
Spoon
Oven heated to 350

INGREDIENTS:
1 1/2 Cups Flour
2 t Yeast
Pinch of Salt
1/2 Cup Warm Water
1 T vegetable oil
Extra Flour
Tomato Sauce
Mozzarella Cheese
Garlic
Basil
Avocado Oil

DIRECTIONS:
1)
In kitchen aid mixer, throw together flour, yeast, salt, water, and vegetable oil.
2) Mix on low for 30 seconds, then on high for about four minutes. Let the dough sit for about 10 minutes. IMG_0671
3) While the dough sits, chop the garlic and put it in a bowl with avocado oil and basil. Spread a small amount in the bottom of the cast iron pan, and reserve the rest for later
4) Chop the mozzarella into small bite sizes.
5) Roll the dough out thin. IMG_0672L

6) Slice the dough into strips and spread with tomato sauce. Place the mozzarella at regular intervals on the dough.

Ready to go in the oven!

7) Cut between the cheese slices and wrap the dough and sauce around the cheese. Placed the wrap slices in the cast iron pan.
8) Spoon the rest of the oil/garlic/basil mixture over the top.  Bake for 20-25 minutes until dough is slightly browned.
