Grilled Veggie Pizza

The deep dish pizza we need on the grill the other week was delicious. The reality though is neither of us is really a fan of deep dish. We prefer New York style pizza, so we decided to take another crack at grilling pizza with a different crust idea. The main flaw in this attempt was we were low on regular flour so I subbed in self rising flour. The result was a strange fluffy crust. Otherwise, everything was spot on flavor wise.

RECIPE: Grilled Veggie Pizza
Makes 4 Servings

2 Cast Iron Pansimg_2230
Cutting Board
Kitchen Aid Mixer
Cheese Grater
Hot Grill

3 Cups Flour
2 1/4 t Yeast
1/2 t Salt
1 Cup Water
2 T oil
Tomato Sauce
Mozzarella Cheese
Sweet and Hot Peppers
Blue Cheese
Italian Herb Mix

1) Combine first 5 ingredients in the kitchen aid mixer. Add 1-2 tablespoons of Italian herb mix, and then let sit for 20 minutes.
2) Split the dough in half and press it into the cast iron pans.
3) Slice the onion and sweet peppers. Chop the jalapenos and garlic into fine pieces.
4) Shred the mozzarella cheese.
5) Heat the grill.

6) Spoon sauce over the dough, and then sprinkle with cheese.
7) On one pizza, top with garlic, sweet peppers, and onion.
8) On the other pizza, top with blue cheese, hot peppers, onion, and jalapeno.
9) Bake on the grill for 15 to 20 minutes. Hint, once the grill reaches heat turn off the burners where you place the pizza. This will allow a well baked crust, but prevent burning.

The cast iron pans will be very hot, so be sure to protect your table and hands with plenty of pot holders and towels.
