Coffee Cake

This isn’t a wimpy coffee cake. This is a filling, hearty, best breakfast ever coffee cake. I would say this is bakery quality, or better, depending on your nearby bakery. This made two cakes, and was enough filling enough that one cake was breakfast for a whole week for both of us.

RECIPE: Coffee Cake
Makes 2 Cakes 

2 Baking Pans
Oven Heated to 350 Degrees

1 Cup Brown Sugar
1/2 Cup White Sugar
2 T Cinnamon
2 Sticks Margarine
2 1/2 Cup Flour

2 1/2 Cup Flour
1 teaspoon Baking Soda
3/4 teaspoon Baking Powder
Pinch of Salt
1 and 1/2 Sticks Margarine
1 Cup Sugar
2 Eggs
1 1/3 Cup Plain Yogurt
1 teaspoon Vanilla Extract

In the mixer, beat together the margarine and sugar until combined.

2) Add the eggs and vanilla extract, beat until well mixed.
3) Add flour, baking soda, baking powder, and salt.
4) Beat in yogurt until a very thick batter forms.
5) Spread the batter into a two greased baking dishes.dscf0581
6) In another bowl, combine the sugar and the margarine.
7)  Add the cinnamon and salt, stirring well.
8) Add in the flour, stirring until very well mixed.
9) Using your adds grab bits of the topping and crumble it over both cakes.
10) Bake for 45 minutes to an hour until a tooth pick comes out clean and the top is golden brown.
11) Let cool on a cooling rack and sprinkle with powder sugar.

  1. Your mother just told me today to watch for this recipe. Sounds good, I only have butter and need to buy some margarine. What size baking pans do you recommend, and should they be greased and floured? Hope all is well. Love, Grandma


    1. Hi Grandma!

      You could also use butter, I just ran out of stick butter when I was baking. I used 9 inch round cake pans for the recipe. I just greased them and they came out beautifully after they cooled. The batter isn’t very sticky, so you can get away without flouring the pans.

  2. Amazing coffee cake! I made two, and gave one to a neighbor, who wants the recipe, so I will pass your posting to her. I will use three pans next time I bake this breakfast delight. I like a more even crumb to cake ratio. Great taste and texture!!!
