Pork Vindaloo (Kind of)

I have been looking for a chance to try out one of my new cookbooks on Indian cooking. This recipe caught my husband’s eye. Unfortunately, I didn’t have the exact ingredients stocked so I had to modify it. So this is kind of Pork Vindaloo, based on the limits of our pantry. I also love how the recipe uses small portions of so many different spices to create the most amazing tasting sauce.

RECIPE: Pork Vindaloo (kind of)
Makes 3-4 Servings

Measuring Utensils
Cutting Board
Cast Iron Pan

1 Lb Ground Pork
2 teaspoons Carroway Seed
1 teaspoon Cilantro
1/2 teaspoon Cumin
1/2 Teaspoon Ground Habanero Powder
1/4 teaspoon black pepper
Dash of Turmeric
Dash of Cinnamon
Dash of Cloves
2 T White Vinegar
1 Medium Onion
1 T Avocado Oil
2 Cloves Garlic
3/4 Teaspoon Ginger Powder
1  Large Tomato
1/4 Mustard Seeds
2 T Coconut Milk
2 Jalapenos
1 teaspoon Salt
1/4 Cup Water
Whole Wheat Naan

1) In a bowl, season the ground pork with the caraway, cilantro, cumin, ground habanero, black pepper, turmeric, cinnamon,  cloves, and vinegar.
2) Mix well with your hands and let set to the side.
3) Wash your hands really well.
4) In a cast iron pan, begin warming the avocado oil.

5) Thinly slice the onion and mince up the garlic.
6) Start cooking the onion until it starts to brown and is nice and soft.
7) Add the garlic and ginger to the onion and let cook for a minute or two.
IMG_20180717_1721246518) While waiting, chop the tomato and slice the jalapenos in half the long way.
9) Add the marinated pork, tomato, mustard seeds, coconut milk, jalapenos, and salt.
10) Sautee everything together.
11) Add the water and bring to a boil and then lower to a simmer. Cover the pan.
12) While everything is simmering on the stove and smelling delicious, you can begin warming the naan in the oven.
13) Occasionally stir the pork mixture and adjust the liquid level as needed.
14) Serve up in bowls with a side of sliced naan.


The best part was there were leftovers for both of our lunches the next day. I think next time I would add even more tomato, mostly because that was my favorite part. I was actually surprised how well it microwaved up at work.
